Food of the islanders – Pol roti

I always want to make some exotic new flavourable food. Nothing comes to mind and my hubby saves the night with something different, something close to my heart =)

My husband volunteered to make dinner the other night. I was very excited to see him in the kitchen. It’s something I haven’t seen him do very often. He made pol roti with raw salad chutney, a typical Sri Lankan meal. This food is apparently eaten by the poor in Sri Lanka as they can afford very little vegetables.

Pol – is coconut in Sinhalese.  Sri Lanka has such good  tropical weather, it produces luscious coconuts, vegetables and fruits. As it is an Island one can expect to eat unknown, exotic and yet delicious fruits.Sadly enough, Rambutan is one of those exotic fruit that we don’t get in South Africa.

A Rambutan fruit is so similar to Litchi maybe they are in the same family line of fruits.

Make sure you have clean hands before preparing this meal – it was all handmade 😉

1 cup all purpose flour (he used cake flour)

1/2 cup fine coconut

Some coriander leaves and curry leaves

1 1/2 teaspoon salt

2-4 green chillies

1/2 medium sized onion

Luke warm water

1. Mix all the dry ingredients together

2. Chop the green chilies into tiny round slices

3. Finely chop the onion

4. Mix all well then add some water, mix with your hand while adding water

5. Mix till it becomes a sticky dough, to make it to a round shape, dab some oil onto hands

6. Tear the dough into small balls and flatten it with your hands (my husband used a plate to flatten it – see picture below)

5. Fry the flattened rotis on a non stick pan with high heat. Make sure to turn the roti on the pan – to cook both sides.

Ingredients – salad chutney

1/4 cup fine coconut

1 tomato

3 – 5 red chillies

1/2 medium sized onion

1 1/2 teaspoon Salt

1 teaspoon Curry powder

1 teaspoon black pepper

Chop the tomato and onion into tiny cubes

Mix all of the ingredients above.

Voila, there’s your chutney.

Bon apetit!
