Idiyappam – String Hoppers

Idiyappam is a Sri Lankan dish. It looks like noodles. It is one of my favourite dishes that my amma makes. 

Ingredients:

1/2 cup rice flour

1 cup cake flour

1/4 cup hot water

salt for taste

Idiyappam ural and plate (wooden mechanism to make the noodle shape)

Pot to steam

Method:

Steam the flours for 30 minutes

After steaming the flours, let it set for a few minutes

Add salt to the flour

Add the hot water with the flour till it becomes a firm dough

Squeeze the dough thorough the idiyappam ural onto idiyappa plate

Steam it in a closed pot for about 10 to 20 minutes

Tip: check whether its cooked – press slightly on the idiyappam to see a bounce while the pot is on the stove

Well, the products used in this dish are readily available in all grocery stores but the pots and dough squeeze are bought in Sri Lankan stores. I got mine in Toronto. The steam pot is AMC branded which is available in Johannesburg.
